CARROT AND SWEET POTATO CROQUETTES (AIP)

Some extraordinarily tasty croquettes, quite simple to make, which can impress even the most delicate taste buds and the most biting noses.

    Ingredients for a small baking tray:

    • A small sweet potato
    • A medium carrot
    • 3 tablespoons of coconut flour
    • 3 tablespoons of tapioca flour
    • 3 tablespoons of olive oil
    • One tablespoon of nutritive dry yeast flakes
    • A quarter of a teaspoon of baking soda activated with a little lemon juice
    • A pinch of salt
    • Half a teaspoon of rosemary powder

    Method of preparation

    Carrot and sweet potato are cleaned, washed and boiled until the fork goes into them. Put them in a blender and puree them, adding 5 tablespoons of the water in which they were boiled. Take out the puree in a bowl and add the rest of the ingredients, resulting in a pliable dough, from which we form the croquettes, with wet hands. Put them in a tray on a baking sheet, put them in the oven heated to 200 degrees Celsius, where they are kept for 35 minutes.
