When following the Autoimmune Protocol (AIP), you can feel left out of the family meal. If you are the one who cooks for all the family members, it is even worse. You prepare all those wonders and you are not allowed to taste them. Nasty. So, you better find a way to cook goodies that will be enjoyed by everyone in the family, including you.
This pumpkin soup is tasty, savory and AIP. It can be consumed by everyone and at any time of the day. If you’re on AIP and wondering what you can eat for breakfast, a bowl of warm pumpkin soup will get you out of the jam. If you come home in the evening with a chill and would like to eat something warm and light, again a pumpkin soup is perfect. What’s more, it’s very easy to make, if you have bone broth in the freezer, a piece of pumpkin and some vegetables in the fridge.
Ingredients
For 5-6 servings
- A sprig of leek
- A small celery
- A carrot
- 300-400 grams of pumpkin cubes
- 100 grams of coconut cream
- 1 teaspoon of salt
- ½ teaspoon of pepper (not included in the AIP version)
- 1 teaspoon of turmeric powder
- 3 cloves of garlic
- 1 and a half liter of bone broth
- 1 tablespoon of duck or goose lard
Recipe Method
I cleaned, washed and cut into medium pieces the leek, celery and carrot. I sauteed them in the duck fat, directly in the pot in which I made the soup, on low heat, stirring continuously. After 5 minutes, I put in half the amount of bone broth and I also added the pumpkin cubes. Put the lid on and let it simmer on low heat until the pumpkin softened. I turned off the heat and let it cool a little with the lid on.
I put some cold bone broth in the blender, then added the cooked vegetables. If you let it cool completely, you don’t need the cold soup, but I was hungry, so I didn’t wait too long. I also put the garlic cloves and mixed until I got a cream. I adjusted the consistency of the soup with the remaining bone broth.
Finally, I tipped the resulting soup into the pot, put it back on the fire and brought it to a boil. I put salt, pepper and turmeric. At the end I put the coconut cream. I mixed well, turned off the heat and put the lid on. I left it for a few more minutes, for the flavors to mingle, then I put it in a bowl and enjoyed it, with a few drops of lemon and a chili pepper (don’t eat chili peppers in AIP, okay?). A wonder!
