Some tired, yellowed and bored apples looked at me desperately from the fruit bowl. They were begging for help so I thought I’d give them some attention. I originally wanted to make apple pie, but it seemed too ordinary, so I decided to make a kind of something else, a combination of cake and apple pie. The result: great success, guests with their taste buds suitably tickled, as was my culinary ego.
Ingredients:
- 200 grams of rice flour
- 3 tablespoons of coconut butter
- 4 tablespoons of brown sugar
- 5 eggs
- A sachet of baking powder
- Grated peel from a lemon
Method of preparation
Melt the coconut butter on the stove over low heat, then mix in the sugar, egg yolks, lemon zest and then the rice flour in turn. Whip the egg whites and add them to the mixture, mixing gently, vertically. The result of our work is poured into a tray with a diameter of 26 cm, best lined with baking paper, or if we don’t have it, with oil and flour, and on top we place 4-5 grated apples, mixed with 4 tablespoons of sugar and a spoonful of cinnamon. Put it in the oven, first on high heat, until it rises, then reduce the flame and leave it for about 40-50 minutes, it depends on the stove.
