Sweet cherry ice cream

On these hot days, a cold ice cream is welcome. And if it’s an ice cream of sweet cherries and other natural ingredients, gluten and dairy free and easy to make, just using a blender, so much the better. I have another ice cream recipe from natural ingredients, here.

    Ingredients

    for 2 large or 4 small portions

    • 250 grams of frozen cherries (pitted)
    • A large haas avocado, well ripe
    • A few drops of vanilla essence
    • A few drops of lemon essence
    • A teaspoon of maple syrup (optional)

    The recipe is very simple, mix all the ingredients in a blender and mix until you get a smooth cream. But until this step, other small but essential steps are needed.

    Wash, pit and froze the cherries in bags. I froze 500 gram bags of cherries for the upside down cake, so I used half a bag for this sweet cherry ice cream goodness.

    About the avocado now. Buy it a few days before. You can rarely find ready-ripened avocados, so they must be bought in advance and left to ripen at room temperature. When, pressing lightly on the skin, the finger goes a little into it, it is ripe. If it’s too soft, it’s no longer good. On the day we want to make the ice cream, we put the ripe avocado in the refrigerator, let it sit for a few hours.

    Then everything is simple, as I said: peel and pit the avocado and put it in the blender, along with the rest of the ingredients.

    It can be eaten immediately, put in the freezer for a few hours, or kept in the freezer for a few days. In the latter case, it is necessary to wait about an hour before eating it, because it will freeze solid. My recommendation is to make it right before you eat it. It’s easy to make if you have the ingredients ready and it’s creamy and sweet.
