APPLE STUFFED WITH BLUEBERRIES AND CRANBERRIES

by Oana

Imagine this scene: coming home from work, you suddenly have a craving for something sweet. Don’t rush to the first candy store to get a box of cookies! After eating them you will feel guilty of the worst sins. And if you are on a gluten-free diet, you have no chance of finding the right cookies. So what to do with the craving that is taking over you? Enter a grocery store and take the biggest apple you can find. Go home and make the fastest and least “guilty” dessert.

    Ingredients (for 2 servings)

    • A big apple
    • 2 tablespoons of raw sugar
    • Dried cranberries and blueberries (I freeze them in the summer), about a handful together
    • A spoonful of sunflower seeds
    • A teaspoon of cinnamon
    • A teaspoon of carob
    • A few drops of vanilla

Cut the apple into two equal halves. You need a yena bowl to fit the two pieces of apple without leaving too much room next to them. In it, put a glass of water, a spoonful of raw sugar and a few drops of vanilla. Scoop out the apple pieces, not too much, just to extract the seeds. Put them in the bowl, hollow side up, in which you put the cranberries, blueberries, sunflower seeds. Nothing happens if they fall into the sauce. Dust them with a spoonful of raw sugar and a spoonful of cinnamon. If the pot has a lid, use it, if not, cover with aluminum foil. Put it in the hot oven on high, we’re in a hurry, right? Keep for about 30-40 minutes, remove the lid and leave for another 5 minutes. Take it out, put it on plates, with itțs own sauce and sprinkle with a teaspoon of carob.

PS: If you don’t have cranberries, use raisins, but I assure you, cranberries are just as tasty.
