Vegetables with pork quickly cooked in a pan

Sometimes we have a piece of meat or grilled sausages left over, and the next day we can combine these pieces with some vegetables and make a quick and tasty dish with what we have around the house or in the freezer.

    Ingredients

    For 2 servings:

    • A small piece of broccoli
    • A small stem of leek
    • A medium carrot
    • 2 handfuls of frozen string beans
    • Pork brisket or other meat of your choice, already cooked on the grill or in the oven, a piece the size and thick of half a palm for each portion. I put a smaller piece of meat and added some dry sausages
    • A spoonful of lard
    • A grated teaspoon of salt
    • A spoonful of dried tomatoes (condiment) – optional
    • A few sprigs of parsley
    • Black pepper – optional

    Recipe Method

    Cut the pork breast into bite-sized pieces and set aside. Cut the leek and carrot into disks, 1cm for the leek and 0.5cm for the carrot. We put them on a plate. We cut the broccoli as follows: we make a cut next to the florets, which we cut to the size of the thumb, we throw away the lower part of the stem (2cm), and we cut the middle part into 2cm pieces that we put next to the leeks and carrot. Finely chop the parsley.

    We put the pan on the stove. I have a medium sized cast iron skillet which is great for this dish. We leave it on high heat for 5 minutes, then reduce the heat, add the lard, and immediately after it melts add the pieces of meat. We put the lid on and leave for about 5 minutes, stirring about 2-3 times during this time. We also put the contents of the plate with leek, carrot and broccoli stem. Likewise, we stir every minute and immediately put the lid back on. After another 5 minutes, add a few tablespoons of water, stir, and put the frozen string beans and broccoli florets on top. Put the lid on and leave for another 5 minutes. Add the parsley, salt and pepper, stir, put the lid on, leave for another 2 minutes and turn off the fire.

    Let the flavors mingle for a few minutes, until we do a little cleaning on the worktop. Ready! In less than half an hour we have a dish that can be eaten together with 2 tablespoons of sauerkraut, pickled cucumbers or a pickle, and then we can treat ourselves with a cookie or a small slice of cake.
