
This is a variation of the homemade chicken ham recipe. I had some organic chicken legs, with nicely colored meat, I deboned and skinned them (I kept the bones and skin for the bone broth), cut them into large pieces of 2-3 cm and I put them aside. I also deboned a large chicken breast, cut it into pieces, which I put in the blender together with the spices (8 grams of salt, 8 grams of dry nutritive yeast flakes, 5 grams of sweet paprika, 5 grams of garlic powder, 3-4 grams of freshly ground pepper. For AIP do not put paprika and pepper.).
I got a nice smelling paste which I mixed with the leg pieces. I followed the rest of the recipe exactly and got a beauty of ham in which the whole pieces of meat are nicely integrated. Goes great for breakfast with millet rolls and almond cream cheese.
