I had some ripe plums and I didn’t really know what to do with them. I thought of making ”gombotzi” according to my recipe, with rice flour and breadcrumbs, but I avoid potatoes, I rarely indulge in some fried potatoes sometimes when I go out. So the idea hit me: how about using sweet potatoes? And to replace the breadcrumbs with coconut flakes and the rice flour with coconut flour, just with a bit of tapioca starch for texture. That way I won’t even have to add sugar. Thus came out some AIP re-introduction dumplings (because it has egg), gluten-free and sugar-free, without sweeteners or raising agents and additives. What’s more, they are also very tasty and photogenic.
Ingredients:
- 2 sweet potatoes (mine were 360 grams both, after boiling and peeling them)
- An egg
- A tablespoon of coconut oil (coagulated)
- 3 tablespoons of tapioca starch
- 100 grams of coconut flour
- A pinch of salt
- Coconut flakes for rolling the dumplings
- Plums or other fruits
Method of preparation
Boil the sweet potatoes, skin on, until the fork goes into them, about 20 minutes. Let it cool, then peel it, cut it into large pieces and put it in a blender with the egg, coconut oil, salt and tapioca starch. It is mixed until a thin cream is obtained, which we turn into a bowl. Manually we will be able to better adjust the consistency of the dough. We put a large pot of water to boil and continue with the dough, that is, we gradually add coconut flour until we get the desired consistency, not very hard, malleable enough to be able to transfer it to the flour-dusted board. There we shape it into a roll, which we cut into pieces of about 3 cm each. We take each piece, press in the middle, put half a plum there and round it in our hands. It molds very nicely, it doesn’t stick to the hands. After the water starts to boil, we put the dumplings to boil. When they rise to the surface of the water they are ready, in about 3-5 minutes. We remove them with the slotted spoon and roll them in coconut flakes. It came out 13 medium-sized dumplings, two of which I ate right after I took their picture.
