Do you remember Popular biscuits? They were so good, not too sweet and not too flavorful. We, the children of the wiser generations, were not used to very sweet biscuits, I remember that the desserts were not as sweet as they are now, they were more aromatic and syrupy. The sweetest dessert I ate as a child was caramel sugar with nuts, turned hot on a chopper and cut with a wet knife. But that happened very rarely.
Now I wanted to recreate the taste of childhood, because it was Children’s Day yesterday, so I made some not very sweet biscuits, probably if I gave them to a child today they wouldn’t like them. I’ve gradually weaned myself off the sweet taste, and for the past few months while on the autoimmune protocol, I haven’t eaten anything sweet, so a tray full of cookies made with just two tablespoons of coconut sugar isn’t unusual.
Ingredients:
- 100 grams of warm water
- A spoonful of hemp or sesame seeds
- A teaspoon of yeast
- One teaspoon of psyllium bran
- 2 tablespoons of coconut sugar
- 150 grams of rice flour
- 60 grams of coconut flour
- 30 grams of melted coconut butter
- One large egg or two smaller ones
- A spoonful of vanilla essence
- A pinch of salt
Method of preparation
From water and hemp or flax seeds we make a milk in a blender or smoothie maker, then together with yeast, psyllium bran and sugar we make the preferment. Let it rise for 15-20 minutes, then mix all the ingredients and knead. I kneaded in the bowl mixer for 10 minutes. We let it rise again in the bowl covered with a towel for about 30 minutes, then we take the dough out on the board, we knead it a little more by hand, and with the help of the rolling pin we spread a sheet almost 1 cm thick from which we cut circles with a glass. To give them a unique shape, I cut out another smaller circle with a beer bottle cap. We put the biscuits in the tray on the baking sheet and put them in the oven heated to 180 degrees Celsius for 20 minutes or until they start to brown. Right after I took them out of the oven, I ate 2 of them hot, I couldn’t no longer wait for them to cool.
