GLUTEN-FREE SOFT COOKIES

There are hundreds of cookie recipes, I even have a few on this blog, also gluten-free, of course. So is there still a need for one more? Yeah, let’s make cookies, let’s eat cookies. We can never get enough of chocolate and cookies.

    Ingredients:

    • 150 grams of rice flour
    • 150 grams of buckwheat flour
    • One tablespoon of psyllium bran
    • An egg
    • A 7 gram sachet of dry yeast
    • 200 ml warm vegetable milk
    • A tablespoon of coconut butter
    • A spoonful of lemon juice
    • A teaspoon of raw sugar

    Method of preparation

    All the ingredients, minus the flour, are mixed and left for 15 minutes to activate the yeast and soften the psyllium bran, then the flour is added and a fairly stiff dough is made, which is left to rise for an hour. After an hour it is spread out on the worktop and the cookies are “cut” with a glass. Place them nicely in the tray on baking paper, then put them in the oven for 30-40 minutes. They can be eaten plain or two can be stuck together, using some jam as “glue”.
