GREEN LEAVES AND CARROT SMOOTHIE

When I see beet leaves I salivate. I do not know why. Probably the red veins combined with the raw green of the leaves make a beautiful and appetizing picture. Of course, now is the season of beet leaves and I couldn’t resist buying a beet with leaves from the market, even though the price is a bit steep.

    Ingredients

    • 3 large beetroot leaves with stems
    • 2 large lettuce leaves
    • Half of a small beet
    • A small carrot
    • Juice from half a lemon
    • Salt and pepper to taste
    • A glass of water

    Method of preparation

    All the ingredients are cut to fit in the blender. That’s the whole philosophy. It can be consumed as a snack between meals, so that we feel at peace with ourselves that we have taken our portion of fiber, minerals and vitamins, before a less healthy meal. That’s what I did today, I drank the green leafy smoothie, then ate bacon with red onion and cucumber.
