In the morning, I make the whole day’s menu in my mind, so that I have time to soak or defrost an ingredient for dinner. And because it is known that I do not like to spend eternity in the kitchen, especially on a beautiful day like this, I soaked 200 grams of brown lentils for 6 hours. Lentils are an easy-to-digest legume, much lighter than most of their cousins, so they can be easily combined with protein. In the case of my dish, I used a lightly smoked and salted bacon. Soaked for 6 hours, the cooking time of lentils is reduced to 10-15 minutes. Being a legume, it contains starch, so it should be introduced quite rarely in our menu, but due to the benefits brought by the vitamins and minerals it contains, as well as the fiber, it is worth considering.
Ingredients for two servings
- 200 grams of lentils
- 100 grams of bacon
- A large onion
- A carrot
- 200 ml of tomato juice
- Salt, pepper, turmeric, dry thyme
Method of preparation
We wash the soaked lentils well and put them to boil. While this is boiling, clean the onion and carrot and cut them. Cut the bacon into slices. Heat them all in a non-stick pan with a spoonful of oil. Meanwhile, the lentils have been cooked, we drain them and add them to the pan. Leave for a few more minutes on a low heat, then add the tomato juice. We season, stir a little more and the dish is ready. We have a tasty and filling dinner in half an hour.
