Who doesn’t like sweet biscuits? And who doesn’t like chocolate? Together the pleasure is double.
Ingredients:
Biscuits
- 250 grams of rice flour
- 2 tablespoons of coconut butter
- 2 spoons of sugar
- An egg
- Half a teaspoon of cinnamon
- A pinch of salt
- 2 tablespoons of water
Glaze
- 200 grams of chocolate
- 2 tablespoons of coconut butter
Method of preparation
Melt the coconut butter in a bain-marie, then add the sugar, egg and water. In another bowl, mix the flour, salt and cinnamon, then pour the above mixture over it. Now knead well until the dough is formed, incorporating all the flour. Refrigerate for 15-20 minutes to spread it better. After this interval, lightly dust a piece of baking paper the size of the tray with flour and we will struggle a little until we manage to roll out a sheet of half a cm of our dough, as square as possible. We carefully place the baking paper in the tray, then use the tip of the knife to divide the sheet of dough into squares that will be our future biscuits. We put the tray in the preheated oven, on a low heat, for 15-20 minutes, be careful that they burn quickly. After they are baked, remove the pan from the oven and prepare the glaze. In a bain-marie or even on the stove over low heat, melt the chocolate together with the coconut butter, then pour it over the biscuits. We put the tray in the fridge for a few minutes, until the chocolate hardens, then we gently separate the biscuits from each other with our hands. It is kept cold.
