This is a very digestible, easy to make and very tasty pizza recipe. It has very few carbohydrates (only 5 tablespoons of millet flour for a 35 cm square pan), fiber (psyllium bran), no egg and no yeast. The crust comes out very thin, elastic and soft, not crispy. I used few ingredients for the topping, just prosciutto and lactose-free cheese. Instead of cheese, you can use mozzarella, for those who eat dairy, or plant based “feta” cheese.
Ingredients
For the crust:
- 400 grams of cauliflower
- 2 tablespoons of psyllium bran
- 5 tablespoons of millet flour (plus flour for spreading the crust)
- 1 tablespoon of dry nutritive yeast flakes
- 1 teaspoon of baking powder
- 2 tablespoons of olive oil
- ½ teaspoon of salt
For the topping:
- 200 grams of prosciutto
- 100 grams of lactose-free cheese
- 100 grams of tomato sauce
Recipe Method
First, we separate the cauliflower into florets and boil it in salted water. When the fork easily goes into it, it’s ready. Drain it in a metal sieve and let it cool. Meanwhile we prepare the blender with knives. We put the cooled cauliflower inside, mix it until it turns into a paste, then add the psyllium bran, inactive yeast flakes, salt, baking powder, olive oil. Mix, then leave for 10 minutes, until the psyllium bran is hydrated. Add the millet flour. We can replace the millet flour with another type of flour: rice, tapioca, buckwheat or chickpea, but we will have to change its quantity a little if we put chickpea or buckwheat flour, we will put 4 tablespoons instead of 5.
At the end we will have a soft dough, a little sticky, which we turn directly onto the baking paper dusted with flour. We will also put a lot of flour on the surface of the dough, then, with the help of the rolling pin, we will spread the surface nicely. We transfer the crust to the tray with the help of baking paper and put it in the oven heated to 180 degrees Celsius for 15-20 minutes. Then we take the crust out of the oven, smear it with tomato sauce, put the prosciutto, pieces or very thin slices, put the cheese on top, and put it in the oven for another 15 minutes. We take the tray out of the oven, let the pizza cool for 10-15 minutes, then we can cut and eat this goodie.
