Let’s have a diversified diet

Our diet should be as diverse as possible. No matter how “superfood” something is, if we consume it daily it is not good for us, but on the contrary, we risk developing a kind of allergy or addiction to it. So it would be nice to know and eat as many foods as possible, from all groups. Let’s not completely exclude a food group, unless we have an intolerance or allergy proven by tests or by our body’s reaction (for example fermented foods if you have histamine intolerance or dairy if you have lactose intolerance). Let’s just be careful how we combine and alternate them.

  • If we do not consume gluten, it does not mean that we eliminate all grains from our diet, but only those that contain gluten. I chose to eat corn and potatoes only occasionally. I only eat whole grain rice. There are pseudocereals, let’s eat millet, chia, buckwheat, quinoa. Meat should not be consumed daily, but with breaks, on fasting days. The same bread, even the gluten-free one, should not be eaten daily. Let’s eat vegetables daily, but always different ones, let’s alternate them. We choose the legumes we feel good with and we also use them once, twice a week, in various ways: stews, pâtés and home-made vegetable “dairies”, as additions to salads, etc. Fruits the same, we see what we tolerate and don’t eat daily. We eat nuts and seeds. Let’s not avoid fatty foods, just choose the healthy ones, without trans, hydrogenated fats, from the intensively processed foods.
  • Let’s preferably eat the foods in season. I can’t eat grapes in winter and spring, I only like tomatoes in summer, and generally I can’t tolerate fruit unless it’s very fresh. It’s good that there is an abundance of vegetables and greens in all seasons, I also eat lettuce, parsley and cucumbers in the winter, but I am aware that they do not have the same nutrients as in the summer.
  • We may have periods when we eliminate certain food groups, keeping Easter or Christmas fasting period, or AIP, or a detox, but let it be temporary. When we fast, let’s not stuff ourselves with flour, plant based pates or soy “meat”, but to moderate food consumption and focus on fresh vegetables, greens and legumes. Whole foods, which we cook at home with love, the way we know and can.

Our body shows us what it likes or doesn’t like, let’s give it the opportunity to have its say, to have a choice. Let’s introduce them to as many healthy cooked foods as possible in various forms.
