Today I felt like eating something meatless, which is very rare for me. And I wanted something tasty, cheap and in season. So I rummaged through the grocery store in the corner and armed myself with some zucchini, carrots and the rest I had in the fridge, so I made the zucchini balls. Gluten free, obviously.
Ingredients:
- A medium zucchini
- A big carrot
- 2 onions
- 3 tablespoons of sesame flour
- 2 eggs
- A teaspoon of salt
- Half a teaspoon of pepper
- Half a teaspoon of turmeric
- Rice flour for rolling the meatballs
Method of preparation
The vegetables are put through the food processor on the small grater, then the juice is squeezed. Sesame flour is easy to prepare: grind 3 tablespoons of sesame seeds in a coffee grinder and throw them in the bowl with grated vegetables. Add the spices, eggs and mix well.You take from the composition and the zucchini balls of the right size are formed, which are rolled in rice flour and placed in the pan lined with baking paper. Put them in the oven at high heat and turn them when needed.
